6 Can Chicken Tortilla Soup


A quick and hearty high-fiber Chicken Tortilla Soup you can whip up with SIX heart-healthy canned ingredients. Embellish with avocado slices and shredded cheese for a great meal.

Ingredients:
  •   1 (15 ounce) can whole kernel corn, drained
  •   2 (14.5 ounce) cans chicken broth
  •   2 chicken breasts, cooked and shredded
  •   1 (15 ounce) can black beans, rinsed well
  •   1 (10 ounce) can diced tomatoes with green chile peppers, drained (Rotel)
  •   1 can Cream of Chicken soup (optional - for a thicker, creamier texture)
Combine all ingredients in a pan and heat till the flavors combine. You can substitute fresh Chicken breasts for the canned chicken. Serve up in a bowl with avocado slices, shredded cheese or fresh pico de gallo made from chopped tomatoes, onions and jalapeños, seasoned with cilantro and lime juice.

Serve with warm whole wheat pita slices for a lunch or light dinner.
